Making your own dressing is so quick and simple once you stock some basic ingredients in your pantry. It's a much healthier option than shelf-stable versions because you control the oil, salt and sugar - and avoid artificial colors and preservatives. Use this whole food, plant-based (WFPB) dressing on salads, roasted or steamed veggies, grains and legumes for an added tangy sweetness.
Makes about 4 servings
Ingredients:
¼ cup aged balsamic vinegar
⅓ cup raw walnut pieces
¼ cup water
1 Tablespoon fresh lime juice
½ Tablespoon Dijon mustard
½ Tablespoon pure maple syrup
1 clove garlic
½ teaspoon dried thyme
¼ teaspoon salt
⅛ teaspoon freshly ground black pepper
Method:
Add all ingredients to a high speed blender and blend until smooth and creamy. Serve cold or at room temperature.
Refrigerate leftovers in an airtight container for up to a week.
Note: The consistency may thicken after refrigerating. Add a teaspoon of water at a time and whisk until you reach a pourable consistency.
