BERRY PECAN SALAD WITH HERBS

This summer salad is our current favorite! A bed of mixed greens, fresh mint & basil is topped with red onion, fresh berries, maple pecans, toasted pepitas, dried cranberries, blue cheese crumbles, and balsamic tahini dressing.


Makes 4 servings


Ingredients:


Salad

  • 5 ounces pre-washed mixed greens

  • 1 cup fresh basil leaves, torn

  • 1/2 cup fresh mint leaves, chopped

  • 1 cup fresh ripe strawberries, sliced (or other berries)

  • ¼ cup unsweetened dried cranberries

  • ¼ cup thinly sliced red onion

  • ¼ cup candied pecans (or walnuts)

  • ¼ cup toasted pepitas, unsalted

  • ⅓ cup blue cheese crumbles, optional


Balsamic Tahini Dressing

  • 2 Tablespoons tahini* (see note)

  • 3 Tablespoons cold water

  • ¼ cup Old World Olive Company 18 Year Traditional Balsamic Vinegar

  • Salt and pepper to taste, optional


Method:

  1. Assemble the salad: To a large serving bowl, toss together the mixed greens, basil, and mint. 

  2. Top the greens mixture with berries, dried cranberries, onions, pecans, pepitas, and blue cheese, if using.

  3. Make the dressing: To a small bowl, whisk together the tahini and cold water until smooth and creamy. Add the balsamic and whisk until combined. Add additional cold water as needed, one teaspoon at a time, until you reach desired consistency. Taste and season with salt and black pepper.

  4. Serve: Add the dressing to the salad and toss until evenly coated. Enjoy!


Note: If you don't have tahini, omit the water and use 4 tablespoons of extra virgin olive oil.
