This summer salad is our current favorite! A bed of mixed greens, fresh mint & basil is topped with red onion, fresh berries, maple pecans, toasted pepitas, dried cranberries, blue cheese crumbles, and balsamic tahini dressing.

Makes 4 servings
Ingredients:
Salad
5 ounces pre-washed mixed greens
1 cup fresh basil leaves, torn
1/2 cup fresh mint leaves, chopped
1 cup fresh ripe strawberries, sliced (or other berries)
¼ cup unsweetened dried cranberries
¼ cup thinly sliced red onion
¼ cup candied pecans (or walnuts)
¼ cup toasted pepitas, unsalted
⅓ cup blue cheese crumbles, optional
Balsamic Tahini Dressing
2 Tablespoons tahini* (see note)
3 Tablespoons cold water
¼ cup Old World Olive Company 18 Year Traditional Balsamic Vinegar
Salt and pepper to taste, optional
Method:
Assemble the salad: To a large serving bowl, toss together the mixed greens, basil, and mint.
Top the greens mixture with berries, dried cranberries, onions, pecans, pepitas, and blue cheese, if using.
Make the dressing: To a small bowl, whisk together the tahini and cold water until smooth and creamy. Add the balsamic and whisk until combined. Add additional cold water as needed, one teaspoon at a time, until you reach desired consistency. Taste and season with salt and black pepper.
Serve: Add the dressing to the salad and toss until evenly coated. Enjoy!
Note: If you don't have tahini, omit the water and use 4 tablespoons of extra virgin olive oil.
