Packed with whole-food ingredients, these energy bites are rich in fiber, protein, omega-3 fatty acids, vitamins, and minerals. They are so popular in our household that I often prepare double or triple batches and freeze some for later enjoyment :)
Yields about 12 pieces
Ingredients:
2/3 cup unsweetened shredded coconut
1/3 cup flaxseed meal

1 teaspoon vanilla extract
2/3 cup runny peanut butter (or sunflower seed butter or any nut butter)

In a medium mixing bowl combine the coconut, flaxseed, sunflower seeds, maple syrup, chia and vanilla and mix well.
Stir in the nut or seed butter until combined.
