Make this gut-healthy drink part of your daily routine! Consume cold with ice on a hot day - or after exercising in place of sugary electrolyte drinks or soda - or use as a mixer with your favorite spirit and/or seltzer water.
INGREDIENTS:
3 1/2 cups filtered water
10 fresh mint leaves (reserve 4 for garnish)
1/4 tsp powdered stevia (or 3 Tbsp pure maple syrup)
1" ginger root, grated
1/2 cup apple cider vinegar (w/ the mother)
2 Tbsp fresh lemon juice
DIRECTIONS:
Boil 3 1/2 cups filtered water and add to mint leaves. Steep for 5-10 mins depending on taste preference (I did 10 mins). Remove leaves.
Add ginger & stevia (or maple syrup) to a quart size jar. Add mint-infused water and allow to cool.
Once cooled, add vinegar and lemon juice.
Store in the refrigerator with an air-tight lid for 4 hours or more. Strain out the ginger pieces before enjoying. Keep refrigerated for up to a month.
