This Mediterranean Bowl is made with roasted veggies, quinoa, greens & hummus - it's light, nutritious and packed with amazing flavors!

INGREDIENTS:
2 cups baby spinach
1 cup arugula (or any spicy greens)
1/2 cup microgreens
1 cup cooked quinoa
2 Roasted Veggie Kabobs (or 1 cup roasted veggies)
1/2 cup pickled turnips (or roasted beets)
1/2 cup kalamata olives, pitted & sliced
1/2 cup hummus (optional)
4 Tbsp Red Wine Vinaigrette
DIRECTIONS:
Dividing all ingredients into four bowls, add in the order they appear above.
Lightly drizzle 1 Tbsp of vinaigrette over each bowl. Enjoy!
NOTE: Add Kalamata olives for extra flavor and healthy fat and pair it with to pita for a mediterranean wrap!
