PICO DE GALLO

Fresh tomatoes, onions, herbs and jalapeno are combined to create this quick & versatile recipe. Use it as a flavor topper on your favorite Mexican dish, fish or eggs - and of course enjoy with tortilla chips!




Yields about 1 cup

Ingredients:

  • 1 cup fresh tomatoes, diced (any color or variety)

  • ½ cup diced onion (white or red)

  • ½ fresh jalapeno, minced (remove seeds and pith to reduce heat)

  • ¼ cup fresh cilantro, firmly packed & chopped (leaves & stems)

  • 2 Tbsp fresh lime juice, about 1 lime

  • ¼ tsp sea salt

Directions:

  1. Combine all ingredients in an airtight container. Store in the refrigerator for up to a week.
