Yields about 3 ½ cups
Ingredients:
3 cups fresh pineapple, diced (about 1 medium cored pineapple)
1 red bell pepper, diced
¼ cup chopped red onion (about ½ small onion)
¼ cup fresh cilantro, chopped and firmly packed
2-3 Tbsp fresh lime juice
½ teaspoon fine sea salt
Directions:
Combine all ingredients in an airtight container and store in refrigerator for 4-5 days.
