Sweet and savory goodness with a heathy spin! Sweet potatoes are full of antioxidants, phytonutrients & fiber. The sauce if full of healthy fats, vitamins & minerals.
INGREDIENTS:
ROASTED SWEET POTATO STICKS
2 sweet potatoes
1 Tbsp coconut oil or avocado oil
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
SWEET DIJON SAUCE
2 Tbsp tahini
2 Tbsp pure maple syrup
1 Tbsp dijon mustard
2 Tbsp unsweetened coconut milk
salt to taste
1/4 tsp pepper
DIRECTIONS:
Preheat oven to 425 degrees F. Line a baking sheet with parchment paper.
Scrub the potatoes until clean. Cut into 1/4-1/2" sticks. Add oil, salt, pepper, garlic and toss until thoroughly coated.
Place on baking sheet in one layer. Be careful to not overlap to ensure even roasting.
Roast for 15 minutes, then flip. Cook for an additional 10 minutes or until browned and slightly crispy. If you'd like them a little more browned, turn oven to high broil for 1-2 minutes. Watch carefully to prevent burning.
Make the sauce while the potatoes are cooking. In a small bowl, whisk together the tahini, maple syrup, mustard, coconut milk, salt & pepper until well combined.
Serve immediately with the sauce either drizzled over the potatoes or on the side. Enjoy!
